Thenga Kozhambu (ccconut curry)
Ingredients
1. 1 small coconut grated 2. 1 teaspoon urid dal 3. 1/2 teaspoon tur dal 4. 1/2 teaspoon rice 5. 1 teaspoon dhania 6. 5 red chillies 7. Tamarid one small lemon size 8. salt - approriate 9. Turmeric powder 10. Oil 1 teaspoon
Method
In a pan, put the oil and fry all the ingredients(2 to 6 mentioned above) till brown. Grind them well with the grated coconut. Make tamarind paste and boil it for 5 minutes. add turmeric and salt. If you want to add vegetables, then ladies finger and/or brinjal are the good ones for this. Fry the vegetables a bit before adding them to the tamarind paste. Once the vegetables are cooked properly, add the coconut paste into it and wait for 5 more minutes. Add curry leaves for garnishing. You can also garnish this with the fried mustard seeds in oil. This is a special kolambu made majorly of coconut and tastes very good. It is a nice change for people who are bored of sambar and rasam every day. Try it !
