Potatoes-3 medium sized nos., Sambar Onion/Pearl Onions-15-20 sliced into half, Ginger-3" piece cleaned and sliced into thin strips, Green chillies-8-10 nos slit, Fresh Curry leaves-4-5 strands, Salt to taste, Coconut milk-2 glasses[Tinned coconut milk can also be used], Coconut oil-1 tbsp.

Deskin the raw potatoes, cut into small pieces. Take a skillet or a vessel, add the potatoes, sambar/pearl onions, ginger, green chillies, salt, half a glass of water, and place it on the stove on low heat. When potatoes are half cooked, slowly add the coconut milk,keep stirring till potatoes are well cooked. Remove from fire, add the 1 tbsp coconut oil, curry leaves and serve.
