Dry Brinjal Vathal Kuzhambhu
Ingredients
Dry Brinjal vathal - 4 tsp.(available in all indian stores) Tamarind Extract- 2 tsp Mustard seeds - 1/4 tsp. Fenugreek Seeds - 1/4 tsp. Asoefoetida - a pinch Turmeric - 1/4 tsp. Chana Dal - 1/2 tsp. Sambhar Powder - 1 tsp. Water 2 cups. Rice flour Curry Leaves Mustard seeds -1/2 tsp Salt - to taste Oil - 2 tsp
Method
Soak Dried Eggplant vathal in hot water for 15 minutes.Drain the water and set aside. (U can use this water for kuzhambhu). Then heat a pan, add 1 tsp oil and fry Mustard Seeds, Fenugreek seeds, Chana Dhal and Asafoetida until Chana dhal become become slightly red. Take 2 teaspoon of tamarind extract and dissolve it in this mixture. Let it boil and add some water. To tamarind liquid add Sambhar Powder, Turmeric and salt.Let it boil for 15 minutes. Once the mixture comes together in taste, add a teaspoon of Rice flour and curry leaves. Serve hot with rice.
