Kerala Pullinkary Sambhar : no dhall required!
Ingredients
Yellow Pumpkin-1piece;White Pumpkin - 1Piece;lady's Finger5to6Nos.;Methi seeds-1tsp;Mustard seeds for seasoning;salt to taste;a little cooking oil;coconut-1small cup grated;Red chillies-long6 to 8;coriander seeds-1tsp;channa dhal-1/4tsp;tamarind-size of lemon;a pinch of turmeric powder;hing powder as preferred;Curry leaves and COriander leaves for topping.
Method
1.Cut both pumpkins and lady's fingers into 2inch cubes/pieces. 2.Extract juice of by soaking it in water for 10minutes 3.Place tamarind water of medium thick consistency in heavy bottom vessel. 4.When tamarind water boils add cut vegetables,a little turmeric,hing powder,slat to taste. 5.While the above boils,get ready the masala.That is,roast coriander seeds,methi seeds and red chillies.Add this to the coconut grated and grind all to a nice paste. 6.When the vegetables are well cooked,add the masala and allow to boil for some more time to get sambhar consistency. 7.In a small kadai,add mustard seeds to cooking oil and when they splutter add to cooked sambhar. 8.Finally add curry leaves and chopped coriander leaves. 9.This sambhar is Kerala speciality .Can be had with rice and Pappad.Useful when guests arrive unexpectedly/no time to cook dhall.
