COCONUT MILK PULAO
Ingredients
Rice 2 cups ( serves 3 persons ) Coconut milk 4 cups ( Grate fresh coconut,grind and squeeze out milk ) Ginger Garlic paste 3 table spoon Cinnamon 3 strips Cloves 4 Cardamom 4 Mint leaves 50 gms Bay leaves 3 Vegetables:Carrot–cut into small cubes (1/2 cup) Beans – cut into small strips (1/2 cup) Green Peas – (1/2 cup) Cashew nut For garnishing Ghee or Oil 50 gms Salt to taste
Method
PROCEDURE : 1. Wash Rice and soak it for 15 minutes in a vessel. 2. Heat Ghee or oil in a cooker. 3. Add Cardamom, cloves and cinnamon and fry 4. Then add Mint leaves and fry 5. Add Ginger-Garlic paste and sauté till the pan leaves oil or ghee 6. Now add the vegetables and sauté for a while. 7. Now add rice soaked in coconut milk into the cooker. 8. Add salt to taste. 9. Close the lid of the cooker and cook until a single Whistle. 10. After the pressure gets released, transfer the contents into a serving bowl and garnish with fried cashew nuts. You can serve this Coconut Milk Pulao along with chicken prepared in a gravy or Cauliflower in a gravy.
