Ingredients :
Brinjal(1/2 Kg), Mustard Seeds - 1 tsp, Channa Dal - 1 tsp,
Curry leaves - as required, Oil - 1/2 cup Sunflower Oil, Rice - 1/2 kg, Jaggery - I small piece (optional), Tamarind extract - 1/2 cup, Vaangibath pwdr - 6-7 spoons

Method of Preperation:
1. Pour oil in a wok or thick bottomed pan.
2. Put mustard seeds & allow it to splutter.
3. Add channa dal now & fry till it turns golden brown,
now add curry leaves.
4. Now add brinjal (previously cut into long pieces)and fry
for few minutes.
5. Add the tamarind extract & vaangibath powder & mix well.
6. If required, u can add little water so that everything
mixes well in the gravy.
7. Then mix the cooked rice (while cooking rice, care to be
taken so that the rice will not stick to each other)into
this thick gravy.
8. Finally, after mixing completely, u can add grated copra
to it to enhance the taste.
This can be taken for lunch to offices.
