Ingredients
Basmathi Rice - 1 cup Big Red Onion - 1 Roma Tomatoes - 2 Fresh Pudina - 1 Bunch Fresh Coriander - 1 Bunch Cashewnuts - 10 Ginger - 1 inch Hot Green Chillies - 7 Garlic - 6 Flakes Ghee - 1 Tablespoon Oil - 1 Tablespoon
Method
Pressure cook rice with 2 cups of water and let it cool. Fry cashewnuts,green chillies,garlic and ginger with 2 teaspoon oil and grind it to paste. Wash pudina and coriander leaves in a colander. Fry pudina and coriander leaves in 2 teaspoons oil until the raw smell goes away. Grind it to a paste. Cut the onion lengthwise thinly. Cut the tomatoes into small pieces. Pour the oil in big non-stick pan and fry onions till it turns golden and then add the tomatoes and fry it becomes soft. Pour the ground masala and fry for 2 minutes. Pour the pudina-coriander paste and fry for another 2 minutes. Add salt. Separate the rice when it cools down. Add the rice keeping the heat low. Add 1 tablespoon of ghee and mix thoroughly. Optional : 1 cup of steamed Cauliflower or Peas or Beans or Carrots can be added according to the taste.
