Vegetable Fried Rice
Ingredients
Basmati Rice - 2 Cups Coconut Milk - 1 Cup Vegetables like Cauliflower,Potato,Peas,Carrot,Beans all sliced length wise about 4 Cups Onion Finely Chopped 1 Cup Pearl Onion 5 in number Tomato big sized 1 Butter or Ghee as needed CashewNuts : 15 in number Almonds : 6 in Number Corriander leaves finely chopped one cup Ginger and Garlic paste : 1 and 1/2 spoon Cloves 5 in number Cummin seeds 1 spoon Cinnamon Stick about an inch Cardomom 2 in number Bay leaves 2 in number Salt to taste
Method
Step 1: Fry the Basmati rice in about 4 spoons of ghee till hot,then cook it with 1 cup of cocount milk and 3 cups of water. After it is done set aside. Step 2: In a blender add 3/4 th of corriander leaves,tomatoes,3 spoons of chopped onion,all the pearl onion,5 cashews and all the almond. Make this into a paste and set aside. Step 3: In a large pan add about 5 spoons of Ghee. To this add cummin seeds,cinnamon stick,cardomom,Bay leaves and Cloves. After frying for about 2 minutes add the chopped onion and saute the mixture.Add ginger garlic paste and fry for two more minutes. To this add the chopped vegetables and add a cup of water. when the vegetables are 75% cooked add the paste grinded as above and add water if needed. Let the whole mixture cook until it becomes a thick paste so that no water is left in the mixture. In a large bowl mix rice and the above vegetable mix prepared as per the taste. Fry the remaining cashews and add it to the vegetable rice. Also add the remaining chopped corriander leaves.
