Carrot Rice
Ingredients
Basmati Rice 1 cup water 1 1/2cup . Carrots 1 lb Onion Big 2 Tomatoes medium size 4 Ginger 1 inch grated Garlic 3 flakes(optional) Mustard 1 tsp Urad dhal 1tsp Chana dal 1tsp Hinge pinch salt as required Chilli powder 2 tsp Curry masala powder 4 tsp(can add more for more flavour), cilantro handful.
Method
To cook Rice Add 1 1/2 cups water to 1 cup basmati rice, few drops lemon juice and cook it in a ricecooker. Cool and keep aside. Peel carrots and grate it in a grater , Cut onions tomatoes into small pieces.Heat oil add mustard once it splutters add the dals, hinge roast it then add onion fry a min add tomatoes fry a min , add carrots saute all together, then add salt , chilli powder, curry masala powder saute well close with a lid and allow to cook in low/medium flame till carrots are soft. finally remove the lid keep sauting till it becomes like a curry , add cilantro remove from flame. Finaly add the rice using fork to the carrot curry above and try to mix in such a way rice does not get mashed and curry mixes all over the rice.
