Vegetable Pongal
Ingredients
1. Raw rice - 1cup 2. Moong dal -1/2cup 3. Carrot -1 3. Beans -100gms 4 Onion -1 5. Brinjal -2 6. Green chillies-2 7. Peanuts -10 8. Coriander leaves 9. Salt 10 Oil
Method
Cook the raw rice and dal in pressure cooker. Chop onion into fine pieces. Chop all the other vegetables length wise. In a kadai add little oil and fry onions and green chillies, when the colour changes add the other vegetables and cook till soft by adding little water. When the vegetables are soft add the cooked dal and rice. Now add the peanuts roasted in little oil. Also addrequired amount of salt. Add two tsps of ghee to it, Mix them well. Garnish with coriander leaves.
