Potal Rice
Ingredients
For the rice : Rice 1 cup, water 2 cups.cook in a pressure cooker till 2 whistles and cool it. Potal - (Veg which is used in Calcutta.. available in all cities) 1/2 kg, panch pod (Somph,black jeera, chilli flakes, jeera, methi seeds)tes patha (masala leaves) 2-3 1 tsp, sambharpowder - 1 1/2 tsp, chilli powder - 1 1/2 tsp, salt to taste. Dhania powder, jeera powder, asafoetida and garam masala can be added according to taste.
Method
Heat oil in a kadai. Add mustard seeds, panch pod, tespatha fry for a minute and add potal. Add sambhar powder, chilli powder, salt etc. stir frywell and close it for some time till the vegetable becomes tender. Do not overcook. Once it is done add garam masala if necessary fry for a minute. Remove from fire,cool it..add rice mix well garnish with coriander leaves. Variation : Sambhar powder and chilli powder can also be added while seasoning Aloo can be added with potal
