| Spinach Rice(Keerai Sadham) |
| Ingredients |

Spinach(fresh/frozen)- 3 handfuls
Cooked Basmati Rice-2 cups
Tamarind - size of a small lime,well dissolved
Dry red pepper- 1
To fry(in a little bit of oil) & grind:
Dried Red Peppers - 2
Dry Kothamalli-2 tsp
Pepper-1 tsp
Jeerakam-1 tsp
Kadalai Paruppu - 1tsp
Oil(Preferably nallennai) - 3 Tbs

Method

In a wok, add oil and fry the dry red pepper and then add the chopped spinach. Once reduced and add the tamarind and cook with lid open so that the gravy attains a much thicker consistency. Then add the ground ingredients and stir for further 2-3 mins.
Now add the rice to the prepared Spinach and mix well.
Secrets: The Basmati rice could be fried in a bit of ghee/any oil before cooking and cooked with a bit of rice so that the grains doesnt stick together
