pudina rice (pudina sadham)
Ingredients
pudina leaves (cleaned)- 1 cup, green chillies - 3-4 (increase or decrease as per taste), tomatoes-2 (finely chopped), onion - 2 (finely chopped), salt - to taste, oil - to season
Method
grind pudina leaves and green chillies. heat 5 teaspoons of oil, add mustard wait for mustard to sputter. add chopped onions, fry till golden brown, add chopped tomatoes frw well, add salt. Now add the ground pudina+ green chillies paste. Fry well till oil leaves sides. Gor flavour add a teaspoon of ghee. Mix boiled rice. Serve with pappadams or raita. It makes a delicious change in your daily lunch. Ideal for packed lunch for office goers and children.
