Spinach pulao
Ingredients
spinach 1 cup, 1 pice ginger, 1 piece garlic, 3 green chillies, 3 tablespoons coconut grated, 1 small piece cinnamon, 1 clove, few curry leaves, 1 spoon garam masala powder, 1 onion, 1/2 tomato, 1 carrot, 1 capsicum, some green peas, 1 cup rice, salt, turmeric powder,
Method
Cook rice with water and keep aside. Grind spinach along with ginger, garlic, chillies, garam masala powder, salt, coconut, curry leaves, cinnamon and clove. keep aside. Finely chop all vegetables. In a pan, take oil and add onions. once they become golden, add tomatoes and stir. After a couple of minutes add all the other vegetables and salt. Once the vegetables are cooked, add the ground paste and cook till spinach loses its smell and the water in the mixture evaporates. Add the cooked rice and serve hot.
