Fat Free Cucumber Raita
Ingredients
1 pint fat free plain yogurt 1/2 cup grated seeded cucumber 1/2 teaspoon roasted ground cumin (roasted cumin seeds in hot skillet) Salt, black and ground red pepper to taste
Method
Peel a cucumber and cut it in half. Remove the seeds from the middle of the cucumber with a spoon. Grate the cucumber on a mandolin and squeeze the grated cucumber to remove excess water. Dewater the pint of yogurt by putting it in a cheese cloth and letting it sit for about an 1/2 hour. Add the cucumber to the yogurt and mix well. Add salt and pepper to taste and mix well with half the ground cumin. Sprinkle other half of ground cumin on top for garnish and taste. Serve with warm toasted pita bread cut into wedges.
