Beetroot & Prawn Poriyal.
Ingredients
This dish could be made with Yellow Pumpkin & Prawn; or Brinjal & Prawn. Ingredients: Onions – 2 big ones finely minced; 3-4 Green Chillies-deseeded & finely sliced;Curry Leaves-a Sprig; Mustard Seeds-1 tspn; Turmeric Powder-1/2 tspn; Salt to taste; Juice of ½ - 1 Lime; freshly scraped Coconut-6-8 Tbspns. Oil-3-4 tbspns. Vegetable –1/2 kg of any of the Vegetables mentioned. Prawns – ¾ or if desired -1 Kg.
Method
Method; Use required Quantity of Beetroots or Pumpkin or Brinjals. If skin has to be removed remove the same & proceed - Clean, wash, cut & keep aside – Use small Prawns, clean, devein, wash well & keep aside. Mince Onions, Green Chillies & fry till onions are brown add Mustard Seeds, Curry Leaves & fry till mustard seeds crackle low heat &add the prawns, salt a pinch of turmeric pwd. & Mix well, let it cook- sprinkle a little water if necessary. When dry, sprinkle scraped Coconut mix well & serve.
