Season the Flour:- Mix Maida, Salt & Pepper Powder dip or toss the meat pcs. In the seasoned flour & keep aside.
Fry the Onions, Curry leaves & Whole spices till Onions are brown add the ginger/garlic paste & fry for 3-4 mins on low heat till the raw smell goes, add Green Chillies; Turmeric pwd; Salt (check before adding salt because you are using a soup cube & you have used salt in seasoning the meat etc.,); add the mat pcs & fry on both sides lightly; once the meat has fried add the mashed tomatoes & continue to fry for a further 2-3 mins add soup or the soup cube (if your using the soup cube add 4 cups water) & cooker the mat in a pressure cooker till tender say for 20 mins.
For the Dumplings:
Maida-1/2 cup; ½ tspn. Baking pwd.;Salt a pinch; Pepper pwd-1/4 tspn; Cake Seeds-1/2 tspn Oil-2tbspns.
Mix all the dry ingredients, rub in the oil add cold water & prepare the dough. Divide into walnut size balls & cook in boiling water or in Soup for 20/25 mins. & keep aside. Keep any of the remaining seasoning flour do not throw it away mix this flour in Ό-1/2 cup water & keep. Or
Instead of making the balls, you could roll out the dough into a chapatti cut into different shapes or in diamond shapes & keep once the meat has cooked leave the cooker to cool down on its on open and place on low/med. Heat add these rolled out & cut shapes to the Stew & let is cook (you will know that it has cooked because the shapes will come to the surface)- now add the seasoning flour mixture to the curry mix well till Stew thickens remove from flame add vinegar or lime juice stir once more & serve. If you do not have any seasoned flour left, you could mix 3-4 tbpsns. of Maida in Ό-1/2 cup of water & add. Garnish with Chopped Coriander leaves & Nutmeg powder. OR
For a Variation:
Instead of making dumpling or rolling out shapes now a days we are getting a lot of pasta in different shapes take a handful of 3-4 kinds of pasta boil & add to the Stew.
For Vegetarians - Instead of Meat Pieces you could add Soya Chunks, Vegetables, dumpling or rolled out shapes or pasta & make the Stew.
Instead of using Meat pcs. You could prepare a dry chillie mince (out of chicken/pork/mutton/beef), make small little puries (discs) place a tablespoon of the mince filling in the center & seal tightly (like little money bags) drop these into the stew & cook till done then add the flour/water mixture for thickening remove add limejuice or Vinegar, garnish with coriander leaves & nutmeg.
