Chicken Curry
Ingredients
Chicken - 1 kg Onions - 4 Big Onions finely sliced Green chillies - 6 - slit in two lengthwise Curry leaves - 1 stalk -(if U don't have or can't get no need to use) Ginger - 1" piece or grated or 1 tspn of paste Garlic - 6 cloves or 1 tspn of paste Turmeric powder - 1 teaspoon Red chilli powder - 2 teaspoon Coriander powder - 3 teaspoon Tomato - 4 med. size Coconut milk - 1 cup (you will get the tins or coconut milk powder in a box use 3 table spoons of coconut milk pwd for 1 glass of water mix nicely & use. If yr. using canned coconut milk - then use I can of the milk - shake the can nicely before opening it) Oil - 4-6 Tbspns Garam masala powder - 2 teaspoon Salt - to taste
Method
Cut and clean the chicken - cut chicken into desired bite able pcs. Slice the onions, slit green chillies, grate/grind the ginger and garlic (or if you get ready made ginger garlic paste buy & use. Put a vessel on the gas (Med. Heat) add oil when the oil is hot add the sliced onion and fry till golden brown now add crushed ginger, garlic and green chillies and continue to fry on medheat for 2- 3 minutes - don't let the ginger/garlic burn. Add chilli powder, coriander powder; turmeric powder, garam masala and fry for another 2-3 mins - don't let the masala burn - if you feel its too dry sprinkle a little water & mix the masala fry till the raw smell goes & oil comes on top now add the chopped tomatoes, curry leaves and fry till tomatoes are soft. Add the chicken and fry (mix well for the chicken & masala to blend) for a few minutes and add salt & 2 cups water cover and leave to cook on low heat for 5-8 mins. or till chicken is cooked now add coconut milk mix well and leave to simmer on low heat only for another 2-3 mins. - remove from heat & serve with Rice/Chappathi.
