Stew
Ingredients
1kg Chicken/Rabbit/Beef/Mutton ½ tspn. Turmeric powder to boil the Meat. Salt to taste Ό cup oil 2 Bay Leaves 3 pieces cinnamon - each 1” long 6 no.’s cloves Cardamoms – 4 no.’s 1 Tbspn. Black Peppercorns 1 cup Onion – finely sliced or 2 big Onions finely sliced Curry leaves – 2 sprigs 6-8 - Green Chillies slit into 2 halves 1 tbspn. Ginger Paste 1 Tbspn Garlic Paste 2 Big tomatoes – chopped Turmeric Pwd ½ tspn 3 big Potatoes cut into 12 pcs. (Each potatoe cut into 4) 1/2 cup green peas Thick Cocnut milk – 1 cup – (from 4 cups of freshly grated coconut) Thin Coconut Milk –2 cups (from the coconut which has been used to take the thick milk) Ghee – 2 tbspns. Chopped Corriander leaves 2 tbspns Chopped Mint Leaves – 1 Tbspn. 2tbspns white vinegar
Method
Method: Cut Beef/mutton into bite size pcs. Wash well & cook in a pressure cooker with salt ½ tspn. Turmeric Powder, 4 cups of water - place cooker on gas oce the steam starts escaping from the vent place stopped & wait for 1 whistle – now lower flame to min & leave to cook for 20 mins. then put off fas & leave the cooker to depressurize on its on –once depressurized - open cooker . Heat oil, fry spices (Cinnamon,cloves,cardamoms, bayleaves,Peppercorns) when they crackle add onions, curry leaves green chillies & fry till Onions are golden brown, lower heat, add the ginger and garlic paste & fry for 2-3 mins. till the raw smell of garlic goes, add the chopped tomatoes & continue to fry till tomatoes are soft – now add the thin coconut milk, par boiled peas & potatoes, cooked meat along with the soup – mix well and let it bubble nicely till thickness is achieved – now add the thick coconut milk, mix well lower heat - add the ghee, & Vinegar – mix again check the salt – if necessary add more – cover vessel & allow to simmer for 2-3 mins – remove from heat & garnish with chopped coriander & mint leaves – serve hot with Rice/Bread/Rotis/Chappatties/Naans etc., & Sweet Mint Chutney. PN: You could add 1 cup of boiled Macaroni to the Stew once the thickness has been achieved along with par boiled vegetables like 2 Carrots cut into 1” long & thick pcs. or disc them; green peas Ό -1/2 cup; 3 Potatoes – cut into 12 pcs.; Green Beans – 10-12 nos cut into 1” long pcs. Cauliflower ½ plucked into florets; Cabbage Ό pc. Finely sliced. & Serve - this way it could be served as a meal by itself. **If you are making Chicken or Rabbit Stew – no need to cook the flesh before hand. Only for Mutton or Beef you have to do so. If your using chicken or rabbit then add the pcs. once the tomatoes are soft – add the pcs. fry for 2-3 mins on low flame – add the thin coconut milk etc., the rest of the recipe is the same. For Vegetable Stew add Par boiled vegetables @ the stage when tomatoes are soft & proceed. Vegetables that could be used are: 2 Carrots cut into 1” long & thick pcs. or disc them; green peas Ό -1/2 cup; 3 Potatoes – cut into 12 pcs.; Green Beans – 10-12 nos cut into 1” long pcs. Cauliflower ½ plucked into florets; Cabbage Ό pc. Finely sliced. Variations: You could make Beef/Mutton with Vegetables mentioned into stew Or you could make just Chicken/Rabbit with Potatoes stew Or just Vegetable Stew Or Macaroni & Vegs. With Beef/Mutton stew.
