Ripe Medium tomatoes - 4, Big Onion - 1, Grated coconut - 5 tspn, Garlic - 3 gloves, Green Chillies - 5 or Red Chillies - 4.
For seasoning, one spoon mustard, one spoon urad dhal , curry leaves and 3 tspn oil to fry.
Method
Cut onions and tomatoes into small pieces. Cut green chillies length wise.
Heat oil in a pan and sauté onions and garlic till it becomes brown but not deep brown. Then add tomatoes and green chillies with them and sauté till tomatoes become soft. Then add coconut and sauté it for a minute. Keep this aside till it becomes cool. Note: If you are using red chillies, fry the red chillies separately. Using red chillies / green chillies give different taste.
For Seasoning:
Keep the oil in a small pan and fry mustard. When mustard splutters , add urad dal and fry till it changes its color. Then add curry leaves and fry it for a minute.
Now coarse grind the mix with salt in a blender / mixi. Add little bit of water if required. Before you remove the chutney add the seasoning mix and grind Only once.
Serve this chutney with Idli, Dosai and Chappathi.
This is my mother's recipe. This definitely makes different taste when the combination ratio is changed. So try it for your taste.
