1 medium sized green lettuce; 2 medium sized red onions thinly slized to rings; 2 medium sized salad tomatoes; 150 gms cucumber seeded and thinly slized; 3 sprigs of young celery; 1/2 of medium sized fresh fennel bulb; 100 gms kallamatta olives;200 gms Fetta cheese or Paneer cut in small cubes.
Salad dressing : 3 tablespoons of extra virgin olive oil; 5 table spoons of balsamic vinegar; 2 cloves of crushed garlic; one tablespoon of cracked black pepper; 1 juice of freshly squeezed lemon.
Mix and shake the salad dressing in a small bottle and set aside.
